டோபூ- ஸுகினி தொகையல் - TOFU - ZUCHINI CHUTNEY !

I was in a mood to cook today and started in earnest. Menu unfolded: Rasam, carrot kootu, cabbage curry and thogayal. But what thogayal?
The zuchini caught my eye. Thanks to our "achi" friend, we have become lovers of the "zuchini thogayal" introduced to us by her.
But there was a tofu packet by its side. The other day when we were visiting the gardens, our friend had brought sandwiches made with tofu spread which were very tasty.
So I thought why not zuchini - tofu mixed thogayal?

So here is the recipe for TOFU - ZUCHINI thogayal/chutney.

Take some oil in a sauce pan and add 3-4 spoons of coriander seeds, 1/4 spoon of mustard seeds, 1 spoon of urad dal, 1 spoon of channa dal, 3-7 red chillies (according top taste) and fry lightly.
Now add two zuchinis cut into small pieces, and toast.
Add half a packet of tofu and mix and keep stirring lightly for 5-10 min.
Let it cool.
Take appropriate quantity of tamarind and soak in a little water.
After 5 min, get the extract, add all the ingredients, some fresh coriander leaves and blend well.
Add salt to taste.

Your chutney is ready.
This can be used to mix with rice or as a side dish to chappati, puri, idli, dosa, etc., and can also be a sauce base for any sandwich.
Can be used with Ritz crackers as a snack too!

Happy cooking!
