சான்ட்விச் பலவிதம்! - Sandwich Galore I: Summer Sandwich

Today it is so hot outside like Madras. With the weather like this sandwiches can be an evening filler and cool your system at the same time.

But there are sandwiches and sandwiches ... We will meet them one by one, ok?

This is a little time consuming to make, but you can refrigerate the base sauce for upto a month, and it tastes so............ good.

I have seen this stall person make this sandwich over and over on so many days, and yet anyday you buy the sandwich tastes fresh and yummy!

Summer Sandwich:
Sandwich base sauce:

Onions, 2-3 cut into small pieces.
Garlic 2 finely chopped.
Green chillies 3-7... you choose.
Pepper - a few
Meithi - 1/2 spoon
Ginger - 1 big piece chopped.
Pudina (Mint) - 2 bunches, cleaned and leaves only.
Coriander leaves - 1 bunch, clean and cut.
(If using immediately, cucumber 1 cut into small pieces)
(You can avoid onion and garlic and still make this.)
salt to taste.

Add few drops of lemon. Put all the ingredients in a blender and with minimum water, blend into a very smooth paste. Set aside.

Cut cucumber and tomatoes, into pieces good for sandwich. (peel the cucumber skin)

Choose a flat bread of your choice. Toast on the tava with some butter.

Spread first butter and then the sauce on one side of the bread.
For children, use sauce without chillies or use less chillies.
Place cucumbers and tomatoes generously on them. Add little bit salt and pepper.
Close both slices together and cut. Sandwich is ready.

To this, add a bowlful of freshly cut fruits like strawberries, pears, bananas, etc.,

To make it a meal, serve with chips, pickle if you like, fruit salad and lemonade!

There is your Summer sandwich!
