ஷாகி டோபு!! - Tofu in a trifle!

It was a dull late evening couple of days ago. With noodles for lunch, we were contemplating going out for dinner, when the telephone rang. It was my friend "jee", asking very kindly, "how many pooris would you like? I'm going to make them and bring it to you as you .." .I said, "hm, let me think; perhaps 12-15 for the three of us.?" She said no problem and hung up. Then half an later, it struck me we need to have some dish to go with it.

I peeped into my refrigerator and the tofu loomed in front of my eyes and vision of my daughter saying "tofu!tofu!" emerged. To go with it I had cute baby idaho potatoes, bell pepper and french beans and tomatoes.

TOFU in a TRIFLE!

Ingredients:

Tofu - 1 pack
tomatoes - 2/3
potatoes - 6 *
bell pepper - 1
french beans - 200 gms.*
ladies finger - 150 gm.*
green chillies - 3-7 depending upon taste.

* - optional, any one or all. Add 2 cloves of garlic and 1 onion to this list.

Cut vegetables to an even size and keep.
With 2-3 spoons of oil in a sauce pan, add black mustard seeds, cumin seeds, and when popped add the vegetables and stir fry. Separately, in another pan with less oil fry tofu cut into small cubes till golden brown.
Add this to th evegetable mix, add salt, red chilli powder, a pinch of jeera powder, garam masala and let simmer for 5 min.

Now you have the dish all ready in under 30 min (including cutting time)!

Instead of tomatoes, you can add tomato paste made early on. Recipe to follow.
