மெடிடிர்ரேனியன் உப்மாவா? கப்சாவா? - MEDITERRANEAN UPMA? - ARE YOU KIDDING

You know there is a love-hate relationship with Upma for everyone. You think of it only when you are short of time, have no other ingredients or just "get the food ready part" done and over with.

Not with this COUSCOUS - Yes it is a Meditterenean item, but makes for an excellent healthy and hearty Upma:

Caution: Just be aware what quantity you want and how much of couscous you are using. It is literaly like a sponge, devours water and left for a few minutes, the quantity literally doubles, triples, etc., whatever comes to your mind. So ordinarily if you are using 1 cup rava, here it may be sufficient to use 1/4 or 1/3 cup cous cous.

Well for the recipe now!

Soak cous cous in water. You can soak in milk too for better taste. That is what I did.
Prepare your vegetables; I had precut carrots, broccoli, tomatoes, onions, ginger, green chillies.
Take a sauce pan and with 2-3 spoons of oil, add 1/4 spoon mustard seeds, 1/4 spoon jeera, 1/4 spoon urad dal, some cashewnuts (or groundnuts). Saute till golden brown. Add a little bit of turmeric powder, garam masala, red chilli powder and a hint of cinnamon powder.

Add the soaked (no liquid should be dripping - it should look dry) couscous, required quantity of salt and keep stirring in medium or low flame, until all the ingredients get mixed well. Add few drops of lemon  or orange juice and stir again.

Top it off with cut grapes(any colour will do) and coriander leaves.

Serve with a banana or strawberries and a cup of orange juice or Greek yoghurt.

A very healthy meal that can serve as  luch or dinner or as a side dish in a large scale prepartaion is ready.
